Joan Smart’s Christmas Turkey Stuffing

StuffingIngredients

1/4 cup butter
2 cups  finely chopped onions
1 1/2 cups finely chopped celery
2 tbsp dried sage
6 slices of  bread to make 3 cups of soft breadcrumbs
3 cored and chopped apples
2 cups cranberries
2 tsp salt and generous sprinkling of pepper
2 tsp brown sugar

Instructions

Melt the butter in a large skillet and sauté the onions, celery and sage on medium-low heat, covered, until tender but not brown, about 5-6 minutes. Remove from heat. Place the bread crumbs and fruit in large mixing bowl and toss in the onion mixture. If stuffing seems dry, add 1-2 tsp of water until the consistency is moist but not soggy. Toss in the salt, pepper and sugar. Chill if not using immediately. To prepare the turkey for the stuffing,  wash out the cavity and dry it well with paper towel. Lightly press the stuffing into the neck cavity and the body cavity. Pull the loose skin over the stuffing or secure with a metal skewer. Roast turkey immediately, once stuffed. Makes 6 cups.
