Award-winning Isle of Man cheddar cheese is the main ingredient that makes the Manx scone irresistible.
Ingredients
1 ½ cups of grated Isle of Man Cheddar cheese
1 cup of crumbled bacon
1 cup finely chopped fresh chives
½ cup of milk (plus 1 tablespoon for brushing over scones)
2 large eggs
2 cups of all-purpose flour
1 tablespoon of baking powder
1 teaspoon of salt
1 cup of unsalted butter
Instructions
Preheat oven to 400°F. In a small mixing bowl, whisk together ½cup of milk with eggs, until smooth and blended. Stir in freshly chopped chives and crumbled bacon. Then in a separate and larger mixing bowl, blend flour, baking powder, salt and butter. Once the mixture resembles a coarse meal, combine both mixing bowl ingredients and add the 1 cup of grated cheese. Mix into a dough. Roll dough onto a lightly floured surface. Cut the dough into ten equal-sized squares. Brush tops with milk, and sprinkle the remaining cheddar on top. Place on a non-stick baking sheet. Bake for around 15 minutes or until golden brown and springs back when tapped. Serve warm with butter.
