Spoil Dad today with a serious serving of Guinness Chicken Wings!

Ingredients

2 tbsp oil
Half a bottle of Guinness (165ml)
1.5 kilos of chicken wings; tips cut off
1 medium onion; chopped finely
2 garlic cloves; chopped
1 large carrot; peeled and cut into chunks
1 large parsnip; peeled and cut into chunks
1tsp thyme leaves; fresh or dried
Salt and pepper; to taste

Ingredients

In a pan large enough to fit all your chicken wings comfortably, heat the oil over a medium heat. Add the onion and garlic and sauté until the onion is soft (about 3 minutes.) Remove the vegetables and set aside. To the same pan, add you the chicken wings and brown on both sides. Return your cooked onions to the pan, along with the carrot, parsnip and seasoning. Pour the Guinness over the chicken and vegetables and bring to a boil over high heat. Once boiling, reduce heat and simmer for 30 minutes. When cooked, you can choose to discard the carrot and parsnip, or eat them if you want to. Place the chicken on a baking sheet and brush with remaining sauce. Place under the grill until both sides are golden and delicious – glistening in the Guinness sauce. Serve hot, on a platter garnished with herbs of your choice.
