Ingredients
1lb Plain Flour
Pinch of salt
1lb currants
1/2 lb sultanas
1/4 lb raisins
9 oz’s soft brown sugar
1/4 lb candied peel
1 large cooking apple, grated
1/2-pint milk or buttermilk (tsp. vinegar in milk)
1 egg, beaten
1 large tspn bi-carb soda
1 level tblspn treacle
1/4 lb lard
1 desert spn. mixed spice
Marinate dried fruit in wine, spirits or hot tea.
Instructions
Sieve flour & sugar then mix dried fruit, apple, salt & spice. Put lard & treacle in a saucepan to melt but keep on as low heat as possible then mix with other ingredients & add egg. Mix bicarb with milk until frothy & add to mixture. Should be enough mix for two 2 lb loaf tins. Bake for about 2 hrs at 170 C. Check spike comes out clean.
